Why are galaxies and solar systems spiral in nature?

A planet has a center of gravity so its mass forms around this center spherically, but why in a solar system and galaxy do the masses tend to circle the center of gravity, whether it be a sun or a black hole, in a circular or spiral pattern. Why wouldn't it resemble something in the way electrons orbit the nucleus in an atom. Basically, why is it so uniform?
